Chettinad Fish Gravy | Special Desi Recipes

If you love south Indian food, try doing Chettinad fish gravy at home. The fiery base delectable and mildly spiced Chettinad fish gravy done with a combination of the flavors makes the dish a treat for your senses. It is one of the must-try hot fish gravy dishes.


As everyone knows that south Indian cuisines have gifted us with many decadent foods whether it is breakfast, lunch, or dinner. Chettinad food is one of the cuisines that originated in the Chettinad region located mainly in the Sivaganga district of Tamil Naidu. Tamil Nadu boasts of a brilliant variety of delicacies that simmer in its local kitchen. Chettinad preparation is top of the pile. Chettinad curries are believed to be the spiciest cuisines in India. Chettinad cuisine is knowns for the complexity of flavors even though the preparation and presentation are simple. It has gained popularity for its complexity of flavors drawn from local spices. And the Chettinad masala is prepared from freshly roasted and grounded spices like coriander seeds, cumin seeds, cloves, cardamom, cinnamon, shah jeera, and garlic. The distinct and mild spice aroma of this masala makes any dish perfection.


This post is about Chettinad fish gravy. For this recipe, I used Murrel Fish ( Korramenu ) which has more flesh and easy to eat. Firstly clean the fish with rice flour, salt, and turmeric. And then soak the fish in saltwater for about 15 minutes, then marinate the fish with general marination. Rest the marinated fish for about 1 hour or overnight. As this was the gravy-based curry, for gravy we used onion and tomatoes with a mix of masalas. Curry leaves play a crucial role along with the Chettinad masala.

Ingredients:

  • Fish - 500g
  • Red Chilli Powder - 1 Tbsp.
  • Turmeric Powder - 1/4th Tsp.
  • Salt - 1 Tsp.
  • Ginger Garlic Paste - 1/2 Tbsp.
  • Lemon Juice - 2 Tbsps.
Chettinad Masala Gravy Ingredients:

  • Oil - 2 Tbsps.
  • Onion - 2 ( 110 g ) 
  • Garlic Cloves - 15
  • Salt - 1 Tbsp.
  • Fresh Coconut - 1/2 Cup
  • Coriander Seeds - 1 Tbsp.
  • Cumin Seeds - 1/2 Tbsp.
  • Cardamom - 2
  • Cloves - 4
  • Cinnamon - 1 Inch
  • Curry Leaves
  • Black Peppercorns - 15
  • Washed Tamarind - Lemon Size ( 20 g)
  • Tomatoes - 6 ( 400 g )
  • Red Chilli Powder - 1 Tbsp.
  • Turmeric POwder - 1/4th Tsp.
Cooking Chettinad Fish Gravy

  • Oil - 4 Tbsps.
  • Fenugreek Seeds - 1/4th Tsp.
  • Mustard Seeds - 1/2 Tsp.
  • Shahjeera - 1/2 Tsp.
  • Onion - 1 Small
  • Salt - 1 Tsp.
  • Dry Red Chillies - 3
  • Green Chillies - 3
  • Garlic - 1 Tbsp.
  • Ginger - 1 Tbsp.
  • Curry Leaves
  • Water - 2 Cup
  • Kasoori Methi - 1 Tbsp
  • Curry Leaves
  • Coriander Leaves
Preparation

Marination Ingredients:
  • Firstly clean the fish very well.
  • Then in a bowl add cleaned fish, along with red chili powder, turmeric powder, ginger garlic paste, salt, and lemon juice.
  • Mix well and Marinate at least for 1 hour or overnight.
  • In a pan add oil then add onions along with salt and garlic cloves.
  • Mix well and saute for about a minute, till it slightly changes color.
  • Then add fresh coconut, coriander seeds, cumin seeds, cloves, cardamom, shah jeera, and saute well.
  • When it releases aroma, add tomatoes and cook till it becomes soft and mushy.
  • When done remove and blend to smooth puree.
  • In the same pan add oil then fenugreek seeds, cumin, and mustard seeds.
  • When the seeds splutter, add dry red chilies, green chilies, ginger, garlic, and curry leaves.
  • Mix well and saute till it releases aroma.
  • Then add blended masala and mix well.
  • Add the required amount of water.
  • mix well and add the marinated fish.
  • Close and cook for about 5 minutes.
  • After 5 minutes, add crushed kasoori methi and curry leaves.
  • Mix slowly and again close and simmer for about 15 minutes.
  • Finally, add coriander leaves and mix well. Serve hot with plain rice or with dosa.
