Green fusilli pasta - with detail photo and video recipe. Savoury and intense mint-garlic flavored fusilli pasta loaded with vegetables and eggs. Fusilli is a variety of pasta that is formed into a corkscrew or helical shapes. These are one of the kids favorite recipe. Usually, pasta can be done by using red sauce or white sauce, this is another variety of pasta done in green sauce.

Green fusilli with egg is another special form of pasta done with mint-coriander leaves and curd paste along with pieces. To cook this fusilli, I used whole wheat pasta with zero maida which is available in today's markets. Then boil the fusilli in boiling water and cook till it becomes soft and chewy, then remove add oil and keep aside. After that prepare the green masala by adding mint, coriander, and curd and blend to smooth puree and keep aside.

Here in this recipe, I used vegetables along with eggs. Adding eggs to the recipe gives extra taste and flavor to the recipe. One can add favorite or seasonal vegetables to the recipe for more nutritional benefits and satisfy one appetite.

Video Recipe Of Fusilli Pasta


Ingredients:

Cooking Fusilli Ingredients:

  • Fusilli - 1 1/2 Cups
  • Water - As Required
  • Salt - 1 Tsp.
  • Oil - 1 Tbsp.

Green Masala Ingredients:

  • Mint Leaves - 1/2 Cup
  • Coriander Leaves - 1/4th Cup
  • Green Chillies - 4
  • Cumin Powder - 1 Tsp.
  • Garam Masala Powder - 1/2 Tsp.
  • Curd - 1/2 Cup.

Cooking Egg Ingredients:

  • Eggs - 3
  • Hing - 1 Tsp.
  • Salt - 1 Tsp.
  • Pepper Powder - 1 tsp.
  • Oil - 2 Tbsps.

Cooking fusilli Pasta

  • Oil - 3 Tbsps
  • Cumin Seeds - 1/2 Tsp.
  • Onions - 1 
  • Dry Red Chillies -2
  • Curry leaves
  • Chopped Garlic - 1 1/2 Tbsp.
  • Chopped Ginger - 1 Tbsp.
  • Kasoori Methi - 1/4th tsp.
  • Capsicum - 1 Or 1/2 Cup
  • Carrots - 2 Or 1/2 Cup
  • Potatoes - 1 Or 1/4th Cup
  • Salt - As Required
  • Chilli Sauce - 2 Tbsps.
  • Coriander Leaves 

Preparation:

  • In boiling water add salt and whole wheat fusilli and mix well.
  • Close and cook for about 10 minutes.
  • When done remove and add oil and keep aside.
  • In a blender, add mint leaves, coriander leaves, cumin powder, garam masala powder, and curd.
  • Blend to smooth puree and keep aside.
  • In Pan add oil.
  • Then add eggs, salt, hing, pepper and mix well.
  • Scramble egg and keep aside.
  • In a pan add oil, Cumin seeds, onions, salt and dry red chilies.
  • Mix well and saute till it changes color.
  • Then add curry leaves, chopped garlic and ginger, turmeric powder and mix well.
  • Saute till it releases the aroma
  • Then add capsicum, potatoes, carrots and green masala.
  • Mix well close and cook for about 5 minutes.
  • After 5 minutes remove and add cooked fusilli and scrambled eggs.
  • Mix well, close and simmer for about 10 minutes.
  • Finally, add coriander leaves and serve hot.

  • In Pan add oil.
  • Then add eggs, salt, hing, pepper and mix well.





  • Scramble egg and keep aside.



  • In a pan add oil, Cumin seeds, onions, salt and dry red chilies.





  • Mix well and saute till it changes color.

  • Then add curry leaves, chopped garlic and ginger, turmeric powder and mix well.





  • Saute till it releases the aroma

  • Then add chili sauce and saute for about 2 minutes then add capsicum, potatoes, carrots and green masala.






  • Then add green masala and mix well.


  • Close and cook for about 5 minutes.

  • After 5 minutes remove and add cooked fusilli and scrambled eggs.



  • Mix well, close and simmer for about 10 minutes.

  • Finally, add coriander leaves and serve hot.
