The very first thought we usually get when we hear Hyderabad cuisine will remind us of delicious biryani, haleem, lukhmi, and Qubani-ka-Meetha. Hyderabad cuisines have a rich, extensive royal saga that lies in the history of nizams. Hyderabad cuisines are usually restricted to a few royal dishes mostly rich in aromatic spices and strong flavors.
Apart from those, another rice recipe of Hyderabad is bagara rice. It is one of the popular rice dishes of Hyderabad, Telangana. It is basically a bowl of spiced rice without added vegetables, or meat, the recipe only adds basic tadka of whole spices which is usually paired up with Mirchi ka salan or aloo korma or any masala-based curry. The dish is widely prepared during weddings, festivals, and social functions and holds a firm position in a vegetarian spread.
Here I am sharing the famous Hyderabad cuisine bagara rice with a twist, by adding coconut milk instead of water. Adding coconut milk to the recipe gives the perfect delicious and tasty bagara rice than usual. For this recipe, we need basmati rice of high quality which is very aromatic. Soak the rice in water for about 15 to 20 minutes. Then extract the milk from the coconut, for this, we need fresh coconut or broken frozen coconut. Both give the same taste and flavor but extracting the milk from fresh coconut gives more freshness than the frozen one. For this, break the coconut, chop and add to hot water and rest for about 10 minutes. Soaking in hot water helps to give more and easy coconut milk. Then blend the coconut by adding water. Here in this recipe, I took 1 whole coconut and 1/2 from the other and I took the milk of two extracts. For 1st extract, I add approximately 180 ml of water and for the 2nd extract, I added 180 ml of water again.
With this procedure, you can get rich and creamy extracts of Coconut Milk, which range from the thickest to the thinnest. Then, you can use these individually or in combination, for culinary purposes as and how a recipe demands it.
Bagara rice follows different cooking techniques in separate households. While some fry the rice along with the whole spices, others directly put it to a boil. In terms of spices, some like to add turmeric powder, and some with red chili powder. But, this recipe is done by frying the whole masala, onion, green chilies, and ginger-garlic paste and boiling the soaked rice. When we are frying the masala gives a very aromatic flavor and all the spiciness comes from the chilies and masala.

Ingredients:
- Basamti Rice - 480 g Or 2 Cups
- Ghee - 2 Tbsps.
- Oil - 2 Tbsps.
- Bay Leaves - 3
- Star Anise - 1
- Kapok Buds - 2
- Mace - few
- Cumin Seeds - 1 Tsp.
- Shahjeera - 1 Tsp.
- Nutmeg Powder - 1/2 Tsp.
- Dagad Phool - Few
- Cloves - 5
- Cardamom - 5
- Cinnamon - 1 Inch
- Onion - 2
- Salt - As Required
- Green Chillies - 5
- Ginger Garlic Paste - 1 Tbsp.
- Mint Leaves - 1/4th Cup
- Curry Leaves
- Kasoori Methi - 1 Tbsp.
- Coconut Milk ( Two Extracts ) - 3 1/2 Cups
- Garam Masala Powder - 1 Tsp.
- Coriander Leaves
Preparation
- Firstly in a bowl add basmati rice and add water and soak for about 20 minutes.
- In the pan add ghee along with oil and wait till the ghee melts.
- Then add all the biryani masala like, bay leaves, cloves, cardamom, cinnamon, star anise, mace, nutmeg, kapok buds, shahjeera, cumin seeds, and dagad phool.
- Saute till it releases aroma.
- Then add sliced onions along with salt and mix well.
- Mix well till it changes color.
- Then add mint leaves, curry leaves, and kasoori methi and mix well.
- Saute well till it releases aroma.
- Then add ginger garlic paste and mix well.
- Saute well till it changes color and releases aroma.
- Then add coconut milk and mix well.
- Add green chilies and bring to boil.
- When the milk gets boils, add soaked basmati rice and mix well.
- Cook till boil then close and cook for 5 minutes.
- After 5 minutes, add coriander leaves and mix well.
- Again close and simmer for about 15 minutes or till the rice is cooked well.
- When done off the flame and rest for about 5 minutes.
- After 5 minutes, serve hot with masala gravy and enjoy.
