Dum chicken curry is one of the different and easy chicken curries that melt in your mouth without much effort in cooking. The only thing we need is to marinate the chicken. This needs some simple and amazing cooking tips to follow. If not the chicken will get burn in the pan itself.
The most of flavors in the Hyderabad dum chicken come from the spices and herbs we used to marinate the chicken. Marinating the chicken is a must and important for any chicken curry, for tasty and juicy chicken. But for this dum ka murgh marination is mandatory and resting the chicken is also very important to enhance the flavors of the chicken.

Dum ka murgh is famous in the Hyderabad region. Of course, it is not just like the ordinary chicken curry, this is something special chicken curry with an aromatic smell, melt-in-mouth chicken and tastes better than any chicken dish that we have prepared till now.

For the perfect chicken curry, soak the chicken in saltwater for about 10 to 15 minutes then clean the chicken with fresh water. Marinate the chicken well and rest the chicken overnight or at least for about 2 o 3 hours. Hyderabadi dum ka chicken is the recipe that is cooked entirely in' dum style'- a process of slow cooking. Cook on high flame for only about 2 minutes, till the chicken and vessel gets heated up then dum the chicken for 25 minutes and rest the chicken for more than 10 minutes. This is one of the long-process chicken curries with less effort. The only thing we do is marinating the chicken and placing on the fire. But, the resulting taste of the recipe will surely leave you craving for more and makes you forget the wait.

The basic spices and herbs that we used in Hyderabad dum ka biryani are mint leaves, coriander leaves, fried onions, garam masala, coriander powder, curry leaves, and green chilies are the same as usual for the dum ka murgh curry. But, the difference is by adding coconut and nuts paste to the recipe along with curd.

Chicken Marination Ingredients:

  • Cleaned Chicken - 500 g
  • Curd - 3/4th Cup
  • Fried Onions - 1/2 Cup Or 3 Onions
  • Coriander Leaves - 1/4th Cup Or 1 BUnch
  • Mint Leaves - 1/2 Cup Or 2 Bunches
  • Red Chilli Powder - 1 1/2Tbsps.
  • Salt - 1/2 Tbsp.
  • Turmeric Powder - 1/4th Tsp.
  • Ginger Garlic Paste - 1Tbsp.
  • Green Chillies - 4
  • Coriander Powder - 1/2 Tbsp.
  • Garam Masala Powder - 1 Tsp.
  • Curry Leaves
  • Lemon - Half Lemon 

Coconut And Nuts Paste Ingredients:

  • Oil - 1 Tbsp.
  • Wet Coconut - 1/2 Cup Or 1/2 Coconut
  • Almonds - 12
  • Cashews - 10
  • Water - 1/4th Cup

Cooking Dum Chicken Ingredients:

  • Ghee - 2 Tbsps.
  • Oil - 4 Tbsps.
  • Cloves - 5
  • Cardamom - 4
  • Shahjeera - 1 Tsp
  • Cumin Seeds - 1/2 Tbsp.
  • Bay Leaves - 2
  • Cinnamon - 1 Inch

Coconut and nuts preparation:
  • In a pan add oil, then add coconut, and saute well.
  • Saute well till the coconut changes color.
  • Then add peeled almonds and cashews.
  • Saute well, till it changes color and releases aroma.
  • When it becomes cool, add to the blender and blend coarsely.
  • Add water and blend smoothly.

Marination Preparation:
  • Firstly soak the chicken in saltwater and clean the chicken well.
  • Then take the cleaned chicken and marinate the chicken with marination ingredients along with coconut and nuts paste.
  • Mix well and rest for about 2 to 3 hours or Overnight.

Cooking Dum Ka Chicken:
  • In a pan add ghee along with oil.
  • Then add Cardamom, cloves, shah jeera, cumin seeds, bay leaves, and cinnamon.
  • Saute well till it releases aroma.
  • Then add marinated chicken and mix well.
  • Now close and pan with the wheat flour sealed plate.
  • Dum on high flame for about 2 Minutes, simmer for about 25 minutes and rest for more about 10 minutes after flame off.
  • Finally, add kasoori methi and coriander leaves and serve hot.

  • Dum on high flame for about 2 Minutes, simmer for about 25 minutes and rest for more about 10 minutes after flame off.
  • Finally, add kasoori methi and coriander leaves and serve hot.
