But, when the moment hunger pangs strike at odd hours, we reach out for a packet of instant noodles and prepare it in a matter of minutes, even if we know it's unhealthy. Why miss the fun, when the healthy version of noodles is available.

Rice Noodles - are simply rice noodles, which made out of rice and water but, sometimes ingredients like tapioca or corn starch are added in order to improve the transparency or to increase the chewy texture of the noodles. They are available in various shapes, fresh, frozen, and dried. They are many varieties like rice flake noodles, rice vermicelli, thin rice noodles, thick rice noodles, medium rice noodles, and rice stick noodles. Rice stick noodles are famous in Thai cuisines. A variety of rice noodles called Idiappam are cooked in Tamil Nadu and some parts of Kerala. These rice stick noodles are raw and they are brittle and soaking in hot water they turn translucent and chewy. They cook very fast and turn mushy if overcooked.
While cooking noodles time plays an important part because we don't want our noodles to be sticky and mushy. To cook these rice noodles follow the instruction provided on the packet and cook accordingly. Here for my recipe, I kept the noodles in a large bowl and poured the hot water over the noodles, and allowed the noodles to soak for about 15 minutes. After 15 minutes remove the noodles from water and rinse them with cold water immediately and add it to the sauce.
These noodles can also be stir-fried with a bowl of mixed veggies along with fresh herbs and spices. Or it even can be prepared with sauces and seasonings. Here my recipe is done with veg sauce done with carrot, potato, onion, garlic, and cashews, and then tempered with chili garlic flavor. Healthy noodles recipe with healthy sauce.

- Carrot - 2
- Potatoes - 2
- Onion - 1
- Garlic - 3 Garlic Cloves
- Cashews - 10
- Water - 1 Cup
- Oil - 3 Tbsps.
- Garlic - 1 1/2 Tbsps.
- Green Chillies - 4
- Curry Leaves
- Crushed Pepper - 1 Tsp.
- Salt - As Required
- Rice Noodles - 2
- Coriander Leaves
- Chilli Flakes - 1/2 Tsp.
- Tomato - 1
- Water - As Required
- In a pressure cooker, add carrots, potatoes, onion, garlic, cashews and water.
- Pressure cook for about 3 whistles.
- When cool, add to blender and blend smoothly.
- In the bowl add rice noodles, break slightly and add hot water.
- Close and rest for 15 minutes.
- In the pan add oil along with garlic, green chilies, and curry leaves.
- Mix well and saute till it changes color and aroma. Then add tomato, chili flakes, and mix well and saute till the tomatoes become soft and mushy.
- Then add smooth puree, and mix well and cook for about 1 minute.
- Then add soaked rice noodles and mix well. Close and rest for about 5 minutes and enjoy.
- In a pressure cooker, add carrots, potatoes, onion, garlic, cashews, and water.

- Finally, add coriander leaves and enjoy.
