Eggs being a wonderful source of proteins can be used to make many delicious dishes. Eggs( Anda ) are one of the versatile and healthy food. Egg can be cooked in numerous ways from simple egg bhurji to flavourful and spicy Chettinad egg recipe. Today's recipe is about egg masala curry done with boiled eggs that are just simmered in spicy and tangy onion-tomato gravy. Firstly boil an egg and remove the shell and make vertical slits and keep it aside.

For onion-tomato gravy, chop the onions bog and cook till the onions change color then add tomatoes, cook till the tomatoes become soft and mushy.

Onion Tomato Puree Ingredients:
  • Oil - 2 Tbsps.
  • Onions - 3
  • Tomatoes - 5
  • Salt - 1 Tsp.
Cooking Egg Masala Ingredients:
  • Eggs - 5
  • Butter - 2 Cubes
  • Oil - 3 Tsp.
  • Crushed Cloves - 8
  • Crushed Cardamom - 3
  • Cinnamon - 1Inch
  • Bay Leaves - 2
  • Japatri
  • Star Anise - 1
  • Shahijeera - 1 Tsp.
  • Cumin Seeds - 1 Tsp.
  • Curry Leaves
  • Green Chillies - 5
  • Turmeric Powder - 1/4th Tsp.
  • Besan - 1/2 Cup
  • Fennel Seeds - 1 Tsp.
  • Kasoorimethi - 1 Tbsp.
  • Coriander Leaves 
  • Garam Masala - 1/2 Tsp.
  • Coriander Seeds Powder - 1 Tsp.
  • Red Chillies Powder - 1 Tbsp.

  • In a pan add oil along with onions and salt.
  • Mix well and saute well till it changes color.
  • Then add tomatoes, and mix well.
  • Close and cook for about 10 minutes or till the tomatoes become soft and mushy.
  • When done, remove and keep aside till it becomes cool.
  • In the same pan, add butter along with oil and heat it melts.
  • Then add crushed cardamom, crushed cloves, cinnamon, bay leaves, cumin seeds, shahi jeera, japatri, and star anise.
  • When it releases aroma, then add green chilies, curry leaves, kasoori methi, and mix well.
  • Mix till it releases aroma, then add fennel seeds and blended puree and mix well.
  • Add turmeric powder, red chili powder, and coriander seeds powder.
  • Add masala water and mix well.
  • Bring to boil then add boiled slit eggs and mix well.
  • Close and simmer for about 10 minutes.
  • After 10 minutes, add garam masala powder and coriander leaves.
  • Mix well and serve hot with jowar roti or with plain rice and enjoy.
